Pork-Pineapple Kebobs with Honey Chipotle Barbecue Sauce

Grilled Pork Pineapple Kebobs

As you’ve probably noticed I’m been on a fresh pineapple kick lately, especially when it’s grilled. I love pineapple paired with pork and wanted to make a recipe that can be made in less than 30 minutes.

I’ve been traveling quite a bit for our Latin Twist Texas book tour and was so excited to come back home. It felt like I was gone forever. I was gone for 12 days, which is the longest stretch I’ve been away from my family. I was homesick and ready to come home. This was our first family meal upon my arrival. I was excited to spark up the grill and cook with my children and eat dinner as a family. This recipe was a hit and will be one I grill again this summer.

  • 1 1/2 teaspoons prepared mustard
  • 2 garlic cloves, minced
  • 1/4 teaspoon dried oregano
  • 1 chipotle pepper in adobo sauce, minced
  • 1/8 teaspoon pepper

  • 4 6-ounce boneless pork loin chops, cut into 2-inch cubes
  • 1 pineapple, peeled and cut crosswise into 2-inch-thick slices
  • 1 red bell pepper, stemmed, seeded, cut into 2-inch squares
  • 1 green bell pepper, stemmed, seeded, cut into 2-inch squares
  • 1 red onion, cut into 2-inch squares

Honey Chipotle Barbecue Sauce:

  1. In a small saucepan, combine all ingredients. Bring to a boil. Divide barbecue sauce in half. One bowl for glazing and additional for serving.

  1. Preheat a gas grill on high heat for 10 to 15 minutes with lid closed. Thread pork, pineapple, peppers, and onion alternating, on skewers. Place on a baking sheet and brush with half of the barbecue sauce.
  2. Oil grill. Place kebabs on grill; reduce heat to medium-high, close lid and grill for 5 minutes.
