Yes, you read that right… Lavender Lemon Margarita. Where has this light and fragrant margarita been all my life?

This margarita is made with a homemade lavender simple syrup, fresh lemon juice, Exotico blanco tequila, and a splash of mineral water. All that’s missing is a beach and a hammock.

This drink reminds me of limonada con agua mineral, which is what I always order when I visit Mexico. It is the most refreshing drink ever! Only this one, is the adult version with the addition of tequila and aromatic lavender.

When cooking with lavender, be sure to purchase culinary lavender to make the lavender simple syrup, which is simply lavender, water, and sugar. Any leftover lavender simple syrup can be refrigerated up to one week and can be used to sweeten lemonade or ice tea.

Next, to take this margarita over the top I rimmed the glasses with pink Himalayan salt for an added little somethin’, and the bubbles make this drink feel extra sophisticated and ultra-refreshing. Exotico Blanco is crisp with an herbal aroma and a hint of spice. It pairs perfectly with lavender and lemon.

This margarita screams ajua and needs to be a part of your Cinco de Mayo celebration! Salud!

Lavender Lemon Margarita

This Lavender Lemon Margarita is made with a homemade lavender simple syrup, fresh lemon juice, tequila, and a splash of mineral water. All that’s missing is a beach and a hammock.

Ingredients

Lavender Simple Syrup:

  • 1 cup water
  • 1 cup granulated sugar
  • 1/2 tablespoon dried culinary lavender

Lavender Lemon Margarita:

  • pink Himalayan salt
  • 2 1/2 ounces simple syrup
  • 1 1/2 ounces Exotico blanco tequila
  • 1 1/2 ounces fresh lemon juice
  • splash of mineral water

Instructions 

Lavender Simple Syrup:

  • In a medium saucepan combine all the ingredients. Bring to a boil over medium-high heat. Reduce the heat to low and simmer until the sugar has dissolved completely, about 2 minutes. Remove from heat, cover, and let steep for 30 minutes. Let cool and strain through a fine-mesh strainer into a jar. Store in refrigerator for up to 1 week.

Lavender Lemon Margarita:

  • Wet the rim of a glass with agave nectar or lemon juice, then dip in salt. Fill the glass with ice.
  • In a shaker, add simple syrup, tequila, and lemon juice, then top with ice. Cover tightly and shake for 15 seconds.
  • Strain into glass, top with mineral water, and garnish with a lemon wheel and a sprig of lavender.

Notes

For this recipe, I recommend Exotico Blanco Tequila. Exotico Blanco is crisp with an herbal aroma and a hint of spice. It pairs perfectly with lavender and lemon.
