These are filled with fresh lobster meat. I’ve had lots of tacos in my life, but when I tasted these gourmet tacos I died and went to taco heaven. They were so delicious and the best part is they were so easy to make. Chopping and prepping the toppings is what took the bulk of my time.
In a large skillet melt butter on low heat and add a little bit of salt. Add fresh lime juice and garlic.
Chop the lobster to bite-size pieces and soak them in the butter sauce and just heat the meat. Sprinkle with pepper flakes, if using.
Warm the corn tortillas. Place warm lobster in tortillas and add your favorite toppings, and a squeeze of lime juice.
Notes
Rather than raw avocado slices or traditional guacamole I grilled slices of avocados. That alone gave the tacos so much more flavor. I also added crunchy red cabbage, a chipotle crema, fresh pico de gallo, and chiles toreados on the side for a little spice.
