1green bell pepper, stemmed, seeded, cut into 2-inch squares
1red onion, cut into 2-inch squares
Honey Chipotle Barbecue Sauce:
In a small saucepan, combine all ingredients. Bring to a boil. Divide barbecue sauce in half. One bowl for glazing and additional for serving.
Preheat a gas grill on high heat for 10 to 15 minutes with lid closed. Thread pork, pineapple, peppers, and onion alternating, on skewers. Place on a baking sheet and brush with half of the barbecue sauce.
Oil grill. Place kebabs on grill; reduce heat to medium-high, close lid and grill for 5 minutes. Turn kebabs and grill until pineapple and peppers are lightly charred and pork is cooked through, about 5 minutes longer or until internal temperature reaches 145-160 degrees. Rest for three minutes and serve with additional barbecue sauce.
