Get ready to fall in love with your new favorite summer recipe; my Spiced Pork and Peach Kabobs are a hit with adults and kids alike. Tender pieces of pork and juicy peach slices are brushed in a sweet and spicy glaze before being grilled to perfection.
1 1/2poundspork tenderloin, cut into 1-inch pieces
3peaches, sliced
1/4red onion, pieces (optional)
Cilantro leaves for garnish, (optional)
Instructions
Soak bamboo skewers in water for thirty minutes.
Preheat grill to medium-high.
Place chipotles, adobo sauce, orange juice, lemon juice, and mango sauce, in a blender and puree.
Separate the sauce in half in two different bowls.
Alternatively thread pork and peach slices onto skewers. Brush sauce onto pork and peaches.
Sprinkle seasonings over kabobs.
Grill skewers on one side until pork releases easily from the grate, about 3 to 4 minutes. Flip skewers and continue to grill for 2 to 3 minutes more.
Brush or drizzle with reserved sauce.
Garnish with cilantro and serve.
Notes
Soak bamboo or wooden skewers in water for thirty minutes prior to turning into kabobs. If you are using metal skewers, you can skip this step.
The sauce can be made and refrigerated up to a week in advance.
The skewers can be soaked and threaded up to 4 hours ahead.
If you can't find good peaches in season, I'd recommend swapping in another stone fruit. Nectarines are the closest in flavor to peaches, but plums or apricots could also work beautifully.
