Easy and healthy popsicles in the colors of the USA making them perfect for the 4th of July! The combination of Blueberries, Strawberries and Coconut Milk is so summery and delicious!
2baskets of strawberries, rinsed, hulled, and chopped
2baskets of blueberries, rinsed
116-ounce can coconut milk
112-ounce can lemon-lime soda
Instructions
Simple Syrup:
Combine water and sugar and heat until sugar dissolves. Makes about 1 ½ cups of simple syrup. Set aside until it cools.
Popsicles:
Combine coconut milk with one cup of simple syrup.
Fill the popsicle molds with strawberries and blueberries. Next fill each mold with sprite and others with coconut milk.
For a stripped look muddle a handful of strawberries and fill about 1/3 of the mold with the mashed strawberries, gently add some coconut milk on top of the mashed strawberries, and finally plop some blueberries into the milk.
Place the lid over the mold and add the popsicle sticks. Place in the freezer and allow time for the popsicles to set, about 4 hours or overnight.
Notes
If you do not have a popsicle mold you can always use small plastic or paper cups, available at most grocery stores.
