Seems like May was the cue to Mother Nature to turn up the dial on the temperature. It is finally warming up in my neck of the woods, which means I’ll be making lots of refreshing cocktail recipes. This cocktail is so invigorating with the combination of cucumbers, mint, and a splash of tangy grapefruit soda. Just be careful because the tequila is slyly hiding in this drink and can be a tad potent, so sip with caution.

This drink is inspired by agua fresca de pepino, which is a traditional Mexican cucumber cooler. Agua fresca (Spanish for fresh water) is a drink served by street vendors throughout Mexico. You’ll be cool as a cucumber sipping this delicious cocktail, especially on Cinco de Mayo paired with your favorite Mexican dishes.

Cucumber-Mint Grapefruit Margarita

This cocktail is so invigorating with the combination of cucumbers, mint, and a splash of tangy grapefruit soda and tequila.

Ingredients

  • 1 cucumber, peeled and coarsely chopped
  • 1 cup water
  • 10 fresh mint leaves
  • 2 tablespoons agave nectar
  • 1/2 cup tequila reposado
  • 1 grapefruit soda
  • Chile-lime powder, recommend Tajin
  • Ice

Instructions 

  • In a blender add cucumbers, water, mint leaves, and agave nectar and blend until smooth.
  • With a fine mesh sieve strain the liquid and discard the pulp.
  • Sprinkle chile-lime powder on a small plate. Using agave nectar, moisten the rims of glasses. Invert the glasses into the chile-lime powder, to coat the rims.
  • Fill a shaker with ice, cucumber mixture, and tequila. Shake well and serve over ice. Top with a splash of grapefruit soda.

Notes

Garnish with cucumber ribbons and mint, if desired.
