Today it’s drizzling outside, cool, and cloudy — I’m not ready to let go of summer. I’m a summer girl and would be in heaven if everyday were 85 degrees. But I guess I have to come to the realization that fall is in the air and sweater season will be here before we know it.
In order to hold on to the season I’m freezing my love of summer. My freezer is stocked with summer juicy watermelon, so when I’m missing summer I can pull out a bag and blend watermelon to make frozen watermelon margaritas. No need to add ice to the blender or to strain the watermelon. Just add all the ingredients to the blender and let ‘er rip.
While I was in El Paso my mom was determined to stand with her walker soon after her knee surgery to teach me a cool way to cut a watermelon. Of course she is always inspiring me and I was determined to share her trick with you. The funny thing is that I should have taken notes, because I should have stood the wider part of the melon on the cutting board for better knife precision. And I should have started with a seedless watermelon. This video is not the way my mom showed me (exactly), but the point is, that it is a quick and simple way to cut a watermelon.
Before the summer is over buy some watermelons, chop them up, and freeze them for frozen watermelon margaritas any time of the year. I beg you, please do not buy pre-made sweet and sour mix. These margaritas are all natural, making this cocktail sweet, slushy, and so refreshing.
Frozen Watermelon Margarita
- 4 cups watermelon, seeded, cubed and frozen
- ½ cup silver tequila
- ¼ cup granulated sugar
- 1 lime, freshly squeezed
- Mint leaves for garnish
- Blend the frozen watermelon, tequila, sugar, and lime juice in a blender. Garnish with mint if desired.
