This post has taken me longer to post than normal and for that I want to apologize to North Denver Sausage.
Katherine Laurienti is the owner and is a very sweet lady over at North Denver Sausage. A few months ago she invited a few local Colorado bloggers to tour her facility to learn all about dry sausage. As I heard her talk I felt like I was in her home and not at a boring factory. She was very proud of her business and very passionate about sausage. She was a wonderful hostess and treated us all like ol’ friends. It was a very interesting tour. I honestly never knew how dry sausage was made. To be completely honest I didn’t even know there was such a thing as dried sausage. After touring her facility it’s very simple actually – The pork sausage is cured with salt and air, that’s it. They use no chemicals or preservatives, which is huge for me. My favorite sausage is the hot dry sausage — the end result is an amazing artesian sausage that is rich with a spicy kick. I call it fancy beef jerky.
Let me tell you what – this sausage was fantastic and my mind was racing with all sorts of inspiration. You can slice it up and serve it as an appetizer with cheese and crackers for a fiesta, serve it with a side of spicy mustard for game day, or pack it up for a camping trip.
My daughter and husband loved it so much they took some on a recent fishing trip. And I recently served some at our Cinco de Mayo fiesta. It was a hit and everyone was asking where they can buy some.
This sausage is not only for Denver locals. North Denver Sausage now has a new website where you can order online. It’s the ultimate gift for the man in your life. Remember Father’s Day is around the corner, so what’s more perfect than something made by hand with love.
