4th of July Popsicles

I’ve seen lots of great looking popsicles all over the blogosphere lately which led me to wonder about what would make a colorful red, white, and blue 4th of July popsicle. Blue I knew would come from blueberries and the red could come from strawberries, raspberries, or even cherries. But where would the white come from? The only thing that came to mind was coconut milk or perhaps a fizzy clear drink like a lemon-lime soda. So instead of picking just one I decided to try them all.

I have a popsicle mold which makes ten popsicles so I tried all sorts of different variations while filling the molds. At one point I used my muddler and muddled some strawberries creating a thick paste to fill the bottom of the mold — one-third with strawberries, about two-thirds with coconut milk, and then I plopped some blueberries into the sea of creamy coconut milk.

The next popsicle is clear and allows the strawberries and blueberries to look like they’re suspended in air. First I filled the mold with cut up strawberries and whole blueberries then I filled the mold with lemon-lime soda. The final popsicle has an elegant and crystallized finish.

The surprise always comes at the reveal because never having made these I didn’t know what the final popsicles would look or taste like. My kids couldn’t wait to taste them and the hardest part was having to wait for several hours for the popsicles to set. The final popsicle is similar to the second popsicle but instead of using lemon-lime soda, I filled the popsicle mold with coconut milk. This one is my favorite, but probably because I’m a sucker for anything with coconut milk.

My two kids and niece who is visiting from Colorado enjoyed testing the popsicles and giving me their opinions of their favorite. They love to test our recipes. So here are direct quotes from each one of them regarding their favorite popsicle.

Simple Syrup


  • 2 baskets of strawberries, rinsed, hulled, and chopped
  • 2 baskets of blueberries, rinsed
  • 1 16-ounce can coconut milk
  • 1 12-ounce can lemon-lime soda


Simple Syrup:

  • Combine water and sugar and heat until sugar dissolves. Makes about 1 ½ cups of simple syrup. Set aside until it cools.


  • Combine coconut milk with one cup of simple syrup.
  • Fill the popsicle molds with strawberries and blueberries. Next fill each mold with sprite and others with coconut milk.
  • For a stripped look muddle a handful of strawberries and fill about 1/3 of the mold with the mashed strawberries, gently add some coconut milk on top of the mashed strawberries, and finally plop some blueberries into the milk.
  • Place the lid over the mold and add the popsicle sticks. Place in the freezer and allow time for the popsicles to set, about 4 hours or overnight.
  • Note: If you do not have a popsicle mold you can always use small plastic or paper cups, available at most grocery stores.
