I go through phases with cocktails and lately I have been on a Moscow Mule kick, because they are so simple to make. In this Moscow Mule-inspired cocktail I substituted traditional vodka for tequila. I call it a “Mexican Burro.” It’s a burro…not a mule. This is a flavorful, Mexican spin on the Moscow Mule. It’s spicy, sweet, and screams ajua.

A Moscow Mule is a simple drink made with vodka, lime, and ginger beer. But rather than vodka, I gave the drink a south-of-the-border kick in the pants with agua de sandia, tequila, lime, and ginger beer.

If you love a Moscow Mule, but wish it had a little more oomph, this Southern cousin replaces the traditional smooth Russian vodka with a shot of Exotico tequila blanco made with 100% blue agave. This tequila has a crisp and herbal aroma with spicy undertones with a sweet and smoky kick. Thus the name: burro, Spanish for donkey, like a mule, but with a kick.

I found that adding agua de sandia balances the spicy tequila and ginger beer quite nicely. The sweet agua de sandia is freshly made and perfect for a summer gathering and festive for a Memorial Day celebration. Make a large batch for the kids, and use it as a mixer for this unforgettable cocktail.

Ingredients:

  • 2 ounces Exotico tequila blanco
  • 2 ounces agua de sandia
  • 1 ounce lime juice
  • 1 1/2 ounces ginger beer
  • Watermelon wedges
  • Mint sprigs

Directions:

  1. Pour the agua de sandia, tequila, and lime juice into a cocktail shaker and fill with ice. Shake for about 10 seconds then pour into a mug with ice.
  2. Top off with ginger beer and garnish with watermelon wedge, lime slice, and mint.
