I use my slow cooker all the time, especially for shredded meat to have on hand for recipes throughout the week. It just makes life easier.

Sure you can make tacos with this pulled pork, but I wanted to lighten up dinner and instead added this meat to green leafy lettuce for lettuce wraps. My children loved this dinner, especially my son who can eat salad for breakfast, lunch, and dinner. He is unlike any other child. If you ask him what he wants for dinner its either a salad or sushi. He cracks me up! I love that he loves healthy food.

This slow cooked pork is so easy to make with the help of HERDEZ roasted pasilla chile. It really requires no work, and I kinda felt like I was cheating. I added all the ingredients to my slow cooker, walked away, and shredded once cooked. Then I let my family build their own lettuce wraps with the succulent and flavorful pulled pork and their favorite toppings. Dinner doesn’t get any easier than that.

Speaking of children – Día del Niño, or Day of the Child is a day to show your little ones that they are appreciated and a big part of our lives. Día del Niño is a Mexican holiday celebrated on April 30 that honors children through different school festivities, parades, and of course delicious foods and treats. Slow Cooker Pasilla Pulled Pork Lettuce Wraps

This slow cooked pork is so easy to make with the help of HERDEZ roasted pasilla chile. It really requires no work, and I kinda felt like I was cheating. I added all the ingredients to my slow cooker, walked away, and shredded once cooked. Then I let my family build their own lettuce wraps with the succulent and flavorful pulled pork and their favorite toppings. Dinner doesn’t get any easier than that.

Ingredients

  • 3 to 4 pounds pork shoulder roast
  • 1 12- ounce Herdez Roasted Pasilla Chile Sauce
  • ½ white onion, sliced
  • 1 garlic clove, sliced
  • 2 bay leaves
  • 6 ounces beer
  • ½ cup low sodium chicken broth
  • salt and pepper to taste

Sure you can make tacos with this pulled pork, 

  • Leaf lettuce leaves, cleaned and dry
  • Shredded carrots
  • Finely sliced red cabbage
  • Lime wedges

Instructions 

  • Place the pork, pasilla chile sauce, onion, garlic, bay leaves, beer, and chicken broth in a slow cooker. Cook on low for 8 to 10 hours. Remove the pork and shred the meat. Add salt and pepper to taste.
  • Place shredded pork in lettuce leaves; add toppings, and a squeeze of lime juice.

Notes

  • Sure you can also make tacos with this pulled pork as a filling.
