September is fast approaching which means fall is nearby. I’m from El Paso and crave the hot desert weather. As much as I love warm comforting foods and the colors of autumn leaves, I will sure miss summer.

Living in Colorado, Labor Day weekend means celebrating the last weekend of summer. Everyone is camping, hiking, grilling, and enjoying the outdoors before the cold weather arrives. I’ve lived in Colorado for 15 years now and its always a guessing game when we will have our first snowfall.

This week I’m not in Colorado, I’m actually in Tampa, Florida with my mom. We are pretty excited! We will be on our first nationally syndicated TV show sharing a simple Mexican picnic menu. We taped today and the show will air on Monday (Labor Day) across the country. Check out the channel listing here to watch us in your city. Mango and Avocado Salsa

Ingredients:

  • 1 mango, peeled, pitted, and chopped
  • 1 avocado, pitted, peeled, and chopped
  • 1 jalapeño, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1 tablespoons chopped fresh basil
  • 1 tablespoon lime juice
  • Salt to taste

Directions:

  1. Combine the mango, avocado, jalapeño, red onion, and basil. Add the lime juice and salt to taste. Set aside and let all the floors come together at room temperature.
  2. Serve as a topping for fish, chicken, grilled steak, or as an appetizer with tortilla chips.
